- Grilled Artichokes w/ Garlic Butter Aioli
Ingredients from the Pantry & Fridge
- 12 medium parsnips
- 1 12 ounce can vegetable broth
- 1 cup of fat free milk
- 1/2 cup of fat free kefir
- 2 tbsp of butter
- 1 heaping tbsp ginger
- sea salt
- cracked peppercorns
- 1 lg artichoke
- 1 tbsp butter
- garlic
- homemade mayo

ReplyDeleteBecky! Artichokes were a little intimidating to me too for home cooking, I was inspired to try again after meeting this lady last week who literally carried around pictures of her artichokes on the grill! I thought, if she can, why not me or you...

Because I had jumbo artichokes I steamed mine for closer to 45 minutes and then grilled them off (cause I like that grilled flavor)
If you don't have time to make an aioli from scratch, use this recipe http://allrecipes.com/recipe/garlic-aioli/detail.aspx and add in an additional teaspoon of melted butter.
